I would definitely disassemble all mechanical items as first step.
A rolling cart ( there are several posts showing these and build specs) .....I had one fabricated by local steel fabrication shop for $750 is highly recommended to allow suspension items to be removed and keep the body mobile .
Also fenders, doors, front and rear lids , bumpers etc. can all be removed . This work will take several months depending on time availability. Once the body is stripped ,all body parts can be dipped and E coated, then the tub can be dipped and E coated as well. The tub can be strapped down on your cart to allow transport to the stripper . They usually have a fork lift and rigging to accomplish the dipping process.
Will post some photos of the cart and related .

Here are photos of the Mobil cart.....there are several varieties that have been posted .
This was a more economical version.
My lift helps a lot for working at various heights .
Also shown is a fender that I bought used ....it was dirty and painted .
This is was a stripped and E coated metal piece will look like.
Your restorer will also thank you for clean piece and easy to see deteriorated metal needing repair.

I celebrated Porsche's 70th by finally getting my engine open, now to figure out what I have. This is after I got the mud dauber nests and acorns out of it.
