I wouldn't rule out a boat trip to Molokini Crater for snorkeling. Start out with breakfast at Beach Bums (my favorite breakfast place on the Island)at the Maalaea Harbor (the place the boat leaves for Molokini) have a Locomoco and their signature double Bloody Mary. Beware of the Locomoco, though. It is a belly bomb and the rest of their menu may be a better choice. You should visit the town of Paia and just walk around. For a splurge, go to lunch at Mama's Fish House on the road to Hana. It is very expensive but you will have a memorable meal and experience. One of my favorite dinner places is near Paia, too. The Haliimaile General Store. A great dinner place but make a res before going. Unfortunately the driving times on Maui from Lahaina are getting really bad. It will be every bit of a hour to get from Kaanapali to Paia. You may want to rethink the trip to Lanai. I can think of many better things to do with a day than Lanai, unless you want to play golf. The Challenge at Manele on Lanai is world class golf. The Maui Cultural Center has a great restaurant and beautiful gardens and is not too far from Kaanapali.

Additional for snorkeling Napili Bay (parking is a bit of a pain but great beach and snorkeling and then Honolua Bay bit of a walk and beach is rocky but very very good snorkeling if waves are small (don't leave anything in the car).

If you go to Napili Bay try Sea House right on the beach, would be great for lunch between snorkeling. Honolula Store for take out or lunch if near Honolulu Bay. If you want to splurge Merriman's. Fleetwood's on Main is good if Mick Fleetwood is playing and you want some music, otherwise no. Star noodle. Joey's Kitchen (has several locations like Napili the best and bring your own beer or wine). Any place that takes reservations make one!

I didn't get through all of the replies to see if it was mentioned, but I would consider using https://turo.com to rent a car.
Depending on what you are planning to do there, I would also recommend https://expeerent.com for recreational equipment too.
Just some good peer-to-peer companies that might be useful.
