And, as I am not an expert, can anyone give me their opinion as to the condition of these sport seats in the pelican parts link? They look restored, and what is a fair price for a restored pair versus an unrestored original pair. Thanks!

I've seen restored double lockers sell for that.
I have a set that are being restored by Tony at Autobahn and should be done any day now. I bought them for a car I thought I'd purchased but that deal fell through. I'd sell them for what I have into them. It should be less than $15k but I haven't been invoiced by Tony yet. If you're interested, shoot me a PM and I'll call Tony to get an update and price.
Will easily cost you $2,500 to have a pair of seats restored, labor and material. I have seen core seats in the $8K-$12K depending on condition and if complete with seat bases.

pelican seats look for me little "over-restored"... this is "problem" of most restored cars: they look like new but are not! in my opinion, best seats for the money are used but well preserved original seats. so have a look at this nice pair sport and bucket out of 1970/71... both in used but good origin condition... sportseat in this sun bleached "mud brown" cord is very rare. you can use bucket as drivers side and sport seat for the lady or the other way. Little damage on perforated letherette will still be repaired carefully.
