Be warned that the larger roll pins can be a bear to remove. You'll also want to make sure that you have replacements on hand for reassembly.
I've only done this twice in the past, but found it to be a fairly straight forward job.

I did this on my 73 in a total of maybe 2 hours. I had my shop press the roll pins out for me. I did repaint everything before reassembly and some powder coat. It's not all that difficult. I used a guide bolt to hold the pedal in position while i put the new roll pin in.
I am doing this now. I seem to have the clutch cable & accerator cable twisted in the tunnel. any suggestions on how to attach to cluster w/o tangling? or which order to do it in

You need to pull the center carpeting up and make sure everything is straight. I think I had to loosen the clutch adjuster at the gearbox to get the cable connected up front then I retightened the cable at the back.
I think it is easier to connect the throttle first. The clutch cable exits its sheath pretty far forward, easy to look in the tunnel with a mirror and check its not wrapped around the throttle. If you prop the pedal all the way up you may not have to disconnect the gearbox end.
Pedal cluster... Hard part is taking it apart. Getting the big roll pin out and getting the clutch pedal loose from the shaft can be tough. After that its a piece of cake. Don't forget the little bushing in the crank eye where the cable clevis attaches.
