I am about to install a new gas tank on my 73 911. I've never replaced one before, and wonder if anyone has recommendations on the other associated parts I should also change when I do this. Hoses, seals, etc.

While the tank is out would be a good time to check and replace any questionable fuel lines and check the brake master cylinder and lines. I replaced all the steel and rubber lines for the brakes and the rubber fuel lines.
Removing and installing the tank is fairly easy once the gas is removed, 3 clips and a couple of hoses. Good time to look for rust and clean it up. I needed to replace the suspension pan and fuel tank support.
I used the foam gasket that is used for installing a cap on a pick up truck for a lot less than the factory gasket.
Are you using a cis tank with swirl pot? It reduces fuel starvation during cornering when the tank is low.
New gas tank seals are pretty cheap. I would just use an OEM one.
Do a very careful inspection for corrosion. There are some access holes in the surrounding sheet metal. It would be a good time to get a can of cavity wax and a flexible wand sprayer to get all those internal body cavities protected.
