Actually I’m building a 356 engine with some modifications, even if I won’t race the car ;)
Not to steal thunder from the rhetorical cloaca of my dear friend from the Valley of the Sun, but 8mm valve stems are typically used only in full race applications in displacement limited classes where 10,000 rpm is not uncommon, and airflow must absolutely be maximized to ensure proper cylinder filling at high gas velocities. In the context of the war of egos fueled by cubic dollars, they require a great deal of adaptation to the stock heads to work. This is exorbitantly expensive if you are lucky.
If it's a $100,000 2,0 screamer grenade motor, yes. For the world's best, smooth running 356-derivative, the conventional valvetrain is more than adequate. Build displacement and call it cool.
