So I’m looking at a 2016 991 for purchase , love everything about it accept the it has GT Silver trim bits on the dash & doors .... I much prefer the Carbon Fiber bits . Can these be changed ? .... anyone have any real life experience w / such work ... I guess I should also ask if the Carbon bits are available from Porsche ?

Yes, they can be changed...pretty confident they all 'snap in' and removed carefully with plastic trim tools. The PORSCHE carbon pieces would be available, but probably crazy money....pretty sure there are aftermarket supplies for the trim pieces you are looking for...GOOGLE is your friend.
