You are planning to take the car well beyond it's originality and being a 71T, will likely never have the dollars thrown at it ever again to be original so,,,,,,,
Was the donor highly original and good shape to begin with or is it "done" and in need of a full resto? Low option car? Signal is a fairly rare color. Only you can determine how much money you want to tie up in this "investment".
I know what I'd do. Originality and matching numbers really comes down to the original stampings on the CASEs. NOTHING inside of those cases will really affect value from an originality perspective for the whole car after rebuild.

To start email Anna Thom. They are located in Poland and her and her husband produce some of the nicest parts for these cars. They make quality still flares. Most of the body panels that you find listed for sale here in the US comes from them and is distributed here stateside.

Update on proposed build. Got Anna's catalogue. Lot of parts she has. How far to go with lightweight components is big decision now. Any ideas? Thoughts are flares, door skins, possibly decklid and hood bonnet (balsa wood).
prefer to stay away from glass as this will mostly be a road car. My intent is to build as period correct as possible 2.3 mfi dual oil coolers most likely. Did get my 8's and 9's ST fuchs early style. Harvey has them already.

If you change your mind on glass/"plastic" I still have a well used body kit sourced from the racing department back in '71. Balsa wood hood, front flared fenders, front and rear bumpers. Requires considerable work, but would add serious authenticity to your build.
