I have Bilstein's on my '67 911 racecar, in which I am super-connected to the fully adjustable suspension and ultimately to the tire patches. In my opinion, Bilsteins would be a bit stiff for street use, especially on a 912, which doesn't really have the power to load them up properly. By comparison, my '69 911 street car is completely stock. In that resto, I put on Boge's, tall Pirelli tires, USA ride height, rebuilt comfort seats, etc. In that car my connection to the road feels a bit too squishy. I think for sporty street use somewhere in-between would be ideal.
