My first season of DE saw me use 185/70/15 Yoko A008R's on std. Fuchs 6's (front) and std. Fuchs 7's (rear). No issues at all, well, except for the driver.

When I was tracking my stock bodied 911E at Streets of Willow, I ran 205/50 Toyo RA1's on 15x7 Cookie Cutters.

Chris that car is 911R #19 owned by registry member Frank Gallogly.
Wheels are deep six (front) & 7R (rear) with 185/70 x 15" Michelin X all round.

As mentioned, it works fine. But, it is 'stretching' the 70's a bit - they're really intended for 6's. I ran them on these 7" AR's all around (same offset as standard 7" Fuchs). This is the only photo I can find that sort of shows how they sit within the fenders:
Stretching the 70's? My tire guy races early 911's and he convinced me to go this way a few years back. They worked quite nicely at Summit Point, Mid-Ohio and Watkins Glen. And I'm not talking parade laps.

The later 2.7 RS models came equipped with 7" & 8" x 15" Fuchs wheels with 185/70 & 215/60 tyres.

Yes, I said 'stretched'. Tire manufacturers' specify a wheel width of 4.5" to 6.0" for 185/70-15 tires since the tread width is only 5.5 inches (i.e., your 7" wheel is 1.5 inches wider than the tire's contact patch on the tarmac!). Again, they will work on 7's (I ran that combination last year) just looks a bit odd. 215/60-15 is the correct width & diameter for 7" wheels. Maybe this shows it better:
