Excellence was Expected is probably the most comprehensive. It is not a light read, but very good! You can find the early single volume editions for around $50 on line. "The Porsche Book" by Barth is good as well. Mostly dry technical info and again early editions can be found for less than $20.
"Porsche 917 - The Winning Formula" by Peter Morgan is a terrific book about 917's.

Thanks everyone. I just popped over to ebay and purchased a used copy of the Hal Thoms book for $30. Looks like new copies are quite expensive...

You could also check out "Porsche Racing Cars - 1953 to 1975" by Brian Long. There's also a volume covering post-1975 cars.
