I have seen many variations of shop towels.
Does anyone know what these are?

They are early. I'd say '63 and up. I used to have an NOS '63 T6B travel kit. The towel looked just like those, kind of a heather grey. The earliest that I have had and the easiest to spot were the 356A which were very distinctive with blue lines above and below porsche. Of course they hav been repro'd, the A towels.

Where can one obtain shop towels these days? I have been unable to find a source.

I have not seen NOS towels like those in a long time. Stoddards used to carry the newer reproductions like these by the dozen pack at Automotion.

I was also able to find the reproduction ones at Stoddards not sure if they still have some in stock.
These are lot better priced.

Spencer,
I was given one at the Essen show a couple of weeks ago by a guy at the Porsche classic stand.
Ask at your local dealer or Stoddards.

I had one on my Porsche shelf at home for the longest time ... then my cat discovered it and ate it. He's a very hungry caterpillar.
Glad to know I can re-up from Stoddard.
