I recently did this to my 70S.
Stoddard was selling the calipers new for only a little more than a rebuilt set of used ones. Steve at Rennsport can do the machining on the rear calipers and supply the rotors.
For the difference in $$$ I would go with new parts

i need to see photos of what you are grinding
The only grinding is on the face of the caliper. The machining of the rears involves lopping off the mounting ears and relocating the holes. Additionally you will need new brake lines, special spacers and bolts. It gets more complicated if you put in a bigger master cylinder. You will need an aluminum cross member for clearance and a special angled fitting for the master cylinder, then you need to clearance the gravel pan.
